Kinki Fish

Known as the “ruby of the sea”, it has a unique “black mark” that is different from the Canadian kipper, and is listed as one of Japan’s “three famous fishes”. It is mainly distributed along the North Pacific coast north of Suruga Bay. Using Japanese ship-freezing technology, the fish bodies are quickly frozen after landing to maintain the most essential freshness and deliciousness. The meat of the fish is high in water and rich in fat. It is soft and has few bones. It is the first choice on festive fish menus in Japan and is very suitable for use in various dishes.
